In a food processor or high-powered blender, combine the all-purpose flour and 3 oz of fresh spinach.
Blend for a couple of minutes, until the mixture comes together to form a vibrant green dough.
Bring a pot of salted water to a boil.
Using scissors, cut small pieces of the dough directly into the boiling water.
Cook the pasta for about 5 minutes, or until they float to the surface and are cooked through. Stir occasionally.
While the pasta is cooking, prepare the sauce. In a blender, combine walnuts, garlic, Parmesan cheese, 1 oz of spinach, and olive oil.
Blend until the sauce is smooth and creamy.
Drain the cooked pasta and add it to a pan with the prepared sauce.
Toss everything together until the pasta is well-coated with the sauce.
Serve immediately, garnished with fresh basil leaves, an extra sprinkle of Parmesan cheese, and a drizzle of olive oil if desired.
Store uncooked pasta shapes in an airtight container in the fridge for up to 2 days, or freeze on a tray then in a bag for up to 3 months. Cooked pasta keeps in the fridge for 3 days and can be reheated gently with a splash of water.
