In a medium bowl, place 1 lb ground pork, 1 tbsp sesame oil, 3 minced garlic cloves, 2 minced shallots, and 2 tsp of sambal. Open the ramen noodle seasoning packet and remove 1 tsp of the seasoning mix, add to the bowl and stir to combine. Transfer the seasoned pork to a pan and roast at 400°F for 15 minutes.
While the ground pork is cooking, place the remaining ramen noodle seasoning in a large bowl. Add 2 tbsp of sesame oil, 2 tbsp rice vinegar, and 2 tbsp honey, whisk to combine.
Add 3 cups of broccoli slaw, 1 cup snap peas, 1 cup scallions, and ¼ cup almonds to the bowl with the dressing. Using your hands, crumble the ramen noodles into the bowl, and toss to combine.
After the cook, remove the pan and, using a fork, break up the ground pork. Return the pan and broil for 5 minutes, or until browned.
Divide slaw between 4 bowls. Using a slotted spoon, divide ground pork between the bowls.
