Season beef cubes with salt and pepper
Heat olive oil in a large pot over medium-high heat
Sear beef cubes on all sides until browned, remove and set aside
Cook bacon in the same pot until crispy
Add onions and mushrooms, cook until softened
Add garlic and cook for 1 minute
Stir in tomato paste and flour, cook for 2 minutes
Slowly add Guinness beer, scraping up browned bits
Add beef stock, bay leaves, and thyme
Return beef to pot, bring to a boil
Reduce heat to low, cover and simmer for 1.5 hours
Add carrots, celery, and potatoes
Continue cooking for 30-45 minutes until vegetables are tender
Remove bay leaves and thyme sprigs before serving
