Crack eggs into a medium bowl.
Season the eggs with salt and pepper.
Add a splash of water to the eggs.
Whisk the eggs until they are well combined and slightly frothy.
In a large non-stick skillet over medium heat, melt the butter.
Place the tortillas in the skillet and warm for about 30-60 seconds per side, until soft and pliable.
In a separate skillet, heat the pre-cooked bacon until warmed through and slightly crispy.
Flip the tortillas and top each with torn pieces of gouda cheese. Continue to warm until the cheese is melted.
