Preheat oven to 350° F and prepare a pie dish, medium-sized baking pan, or casserole dish with spray oil.
Split the skin of the boudin all the way down the length of the sausage and scoop out the filling into a small bowl.
Cream the cream cheese with a hand or stand mixer in a large bowl until smooth.
Add sour cream to the cream cheese and blend together with the mixer.
Stir in 1 1/2 cups of the cheese, boudin meat, seasonings, green chilies, 2 crumbled bacon slices, and half of the green onions until they are well incorporated.
Spoon the dip mixture into the prepared pan.
Place the pan in the oven and bake for 20 to 25 minutes or until the boudin dip bubbles on the edges.
Remove the dish from the oven and sprinkle the top with 1/2 cup cheese, and the rest of the bacon and green onions.
Serve warm with baguette slices, chips, or crackers.
