In the bowl of a stand mixer, combine the all-purpose flour, almond flour, powdered sugar, and baking powder. Add the cubed cold butter and mix with a paddle attachment until the mixture becomes crumbly.
Add the cold egg and continue mixing until the dough comes together into a smooth, soft ball. The dough should not stick to your hands.
Use a teaspoon to scoop uniform portions of dough, then roll each portion into small balls.
Preheat your walnut mold, either electric or stovetop. Place one dough ball into each cavity and press closed. Cook until golden brown, about 1–2 minutes per side if using a stovetop mold, or 3–4 minutes in an electric baker. Trim the edges with a sharp knife for a clean walnut shape.
Allow the cookie shells to cool completely before filling.
