Place frozen dinner rolls in a greased 6-cup muffin tin. Cover and let them rise at room temperature for about 4 hours until proofed.
Preheat your oven to 375°F (190°C).
Place a sheet of parchment paper over the muffin tin with the risen rolls.
Place a second, identical muffin tin on top of the parchment paper and press down firmly to create a well in each dinner roll.
Place a heavy, oven-safe skillet (like a cast iron skillet) on top of the stacked muffin tins to weigh them down.
Carefully place the entire assembly in the preheated oven and par-bake for about 7 minutes.
Remove from the oven and carefully lift off the top skillet, muffin tin, and parchment paper. The rolls should now be formed into cups.
Crack one egg into each of the par-baked roll cups.
Add 2-3 Boursin cheese bites into each cup with the egg.
Season each egg with freshly ground black pepper and a little salt.
Top each cup with crumbled cooked bacon.
Return the muffin tin to the oven and bake for another 15 minutes, or until the eggs are set to your liking and the rolls are golden brown and fully cooked.
Store cooled bites in an airtight container in the refrigerator for up to 4 days, or freeze up to 3 weeks. Reheat in a 350°F oven for 8–10 minutes until warmed through.
