Preheat your oven to 400°F (200°C).
In an 8x8 inch baking dish, add the can of diced tomatoes.
Season the tomatoes with onion powder, minced garlic, Italian seasoning, and about 1 tablespoon of olive oil. Stir to combine.
Place the wheel of Boursin cheese in the center of the tomatoes and drizzle with the remaining 1 tablespoon of olive oil.
Bake for 35 minutes.
While the sauce is baking, cook the pasta according to package directions. Before draining, reserve about 1/4 cup of the starchy pasta water.
Slice the smoked sausage and pan-fry in a skillet over medium heat until lightly browned.
Once baked, carefully remove the dish from the oven. Use a spoon to break up the Boursin cheese and stir it into the tomatoes until a creamy sauce forms.
Add the cooked pasta to the baking dish, followed by the reserved pasta water. Stir everything together until the pasta is well-coated.
Mix in the cooked smoked sausage.
Serve immediately, garnished with freshly ground black pepper if desired.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 350°F oven covered with foil, or in a skillet over medium-low heat with a splash of pasta water to restore creaminess.
Yes. Any short pasta like penne, rigatoni, or fusilli works well and holds the creamy sauce equally.
Standard pork smoked sausage is traditional. Polish kielbasa or turkey smoked sausage are good alternatives.
Yes. Assemble the pasta dish in a baking dish, cover, and refrigerate up to 24 hours. Bake as directed, adding 5–10 minutes extra time if cold.

No, it contains smoked sausage. Omit the sausage or replace it with sautéed mushrooms or spinach for a vegetarian version.
