Preheat your oven to 425°F (220°C).
Unroll the pizza crust onto a greased baking sheet and press it out evenly.
Poke holes all over the crust with a fork to prevent it from bubbling up.
Pre-bake the crust for 5 minutes.
While the crust bakes, brown the breakfast sausage in a skillet over medium heat, breaking it up as it cooks.
Once the sausage is cooked, add 3 tablespoons of butter and let it melt. Stir in the flour and cook for a few minutes to cook out the raw flour taste.
Slowly stir in the half-and-half. Continue to cook, stirring constantly, until the gravy has thickened.
Season the gravy with salt and pepper to taste, then set aside.
In a bowl, whisk together the eggs and milk.
Melt 1 tablespoon of butter in a clean skillet and scramble the eggs until they are set but still slightly undercooked. They will finish cooking in the oven.
Spread the sausage gravy evenly over the pre-baked pizza crust.
Top the gravy with the shredded mozzarella cheese.
Scatter the scrambled eggs and crumbled bacon over the cheese.
Sprinkle the shredded cheddar cheese on top.
Bake for 7-9 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
Let the pizza cool for a few minutes before slicing and serving.
Store leftover pizza covered in the refrigerator for up to 3 days. Reheat slices in a 350°F oven for 8–10 minutes or in a skillet over medium heat until warmed through.
Yes. Prepare the gravy up to 2 days ahead and refrigerate. Reheat gently on the stovetop before spreading on the crust, adding milk if it thickens too much.
Use bulk breakfast sausage (not links). Mild or sage varieties both work well depending on your flavor preference.
Yes. Homemade pizza dough, store-bought dough, or even naan and English muffins work as alternatives to refrigerated crust.
Scramble the eggs just before topping the pizza and keep them slightly underdone, as they will continue cooking in the oven at 400°F.
Yes. Double or triple the sausage gravy and eggs, and use two pizza crusts or one large rectangular crust. Bake times may increase by 5–10 minutes.
