Instructions

1
1) In a pan over medium heat, bring olive oil to a water like consistency. Place chicken in pan and brown. Cover exposed side of chicken with salt, pepper, and oregano. Cook for 3-4 minutes and flip. Sprinkle semi-cooked side with salt, pepper, and oregano. Cook until browned on both sides. If needed, add ¼ water to pan and cover to ensure chicken is cooked all the way through
2
2) Remove chicken from pan to a plate. Add butter to the pan and melt. Once melted, add garlic and cook until fragrant. Add cherry tomatoes and cook until tomatoes burst and soften. Add spinach and cook until wilted. Add 2 cups heavy cream and bring to a simmer. If using peas and nutmeg, add those here and stir. Begin cooking noodles
3
3) Once cream is simmering, add parmesan in batches, only adding more once current parmesan has melted. Once all parmesan is melted and sauce has thickened add chicken, and accumulated juices back to the pan. Stir, cover chicken in sauce and let heat for 2-3 minutes or until chicken is hot
4
4) Serve over noodles and enjoy!

Tips & Notes

Pro tips

Pound chicken breasts to even thickness (about ¾ inch) before cooking to ensure uniform doneness and prevent dry edges.
Bloom the minced garlic in butter for 30–45 seconds before adding cream to deepen its flavor and eliminate raw garlic bite.
Add spinach at the end off-heat to preserve its vibrant color and nutrients; residual warmth wilts it without overcooking.
Shred parmesan fresh rather than using pre-grated varieties, which contain anti-caking agents that can make the sauce grainy.

Substitutions

Heavy cream → half-and-half or crème fraîche (sauce will be less rich but still creamy)
Fresh spinach → kale or arugula (adjust wilt time; arugula adds peppery note)
Cherry tomatoes → diced sun-dried tomatoes or fresh heirloom tomatoes (sun-dried adds concentrated flavor)

Storage & make-ahead

Store leftover pasta and sauce together in an airtight container for up to 3 days; reheat gently on the stovetop over low heat with a splash of cream or reserved pasta water.
