1) In a pan over medium heat, bring olive oil to a water like consistency. Place chicken in pan and brown. Cover exposed side of chicken with salt, pepper, and oregano. Cook for 3-4 minutes and flip. Sprinkle semi-cooked side with salt, pepper, and oregano. Cook until browned on both sides. If needed, add ¼ water to pan and cover to ensure chicken is cooked all the way through
2) Remove chicken from pan to a plate. Add butter to the pan and melt. Once melted, add garlic and cook until fragrant. Add cherry tomatoes and cook until tomatoes burst and soften. Add spinach and cook until wilted. Add 2 cups heavy cream and bring to a simmer. If using peas and nutmeg, add those here and stir. Begin cooking noodles
3) Once cream is simmering, add parmesan in batches, only adding more once current parmesan has melted. Once all parmesan is melted and sauce has thickened add chicken, and accumulated juices back to the pan. Stir, cover chicken in sauce and let heat for 2-3 minutes or until chicken is hot
4) Serve over noodles and enjoy!
