Preheat the oven to 350°F (180°C). Spread softened butter along the bottom and sides of a 9x13-inch casserole dish.
Place the slab of Hawaiian rolls in the dish and cut a slit into the top of each roll, taking care not to cut all the way through.
Place a hot dog half into the slit of each roll.
Drizzle a thin layer of yellow mustard over the top of the hot dogs.
Top evenly with chili and then the nacho cheese sauce.
Sprinkle with shredded Cheddar cheese and scatter the jalapeño slices evenly over the top.
Bake in the preheated oven until bubbly and the cheese is melted, about 30 to 35 minutes.
Remove from the oven and top with finely chopped onions. Serve immediately.
Store leftovers covered in the refrigerator for up to 3 days. Reheat covered at 350°F for 15-20 minutes until warmed through.

Yes. Assemble the casserole through step 6, cover with foil, and refrigerate for up to 24 hours. Bake covered for 35-40 minutes, then uncover for the last 5 minutes if needed until cheese is melted and bubbly.
Use a canned chili with beans or meat (15 ounce can as specified). Drain excess liquid if it's very wet to prevent the casserole from becoming soggy.
Yes. Use warm cheese dip, melted American cheese slices, or a homemade cheese sauce. Nacho cheese sauce is preferred for ease and flavor consistency.
Bake for 30-35 minutes until the cheese is fully melted and the casserole is bubbly around the edges. The Hawaiian rolls should be golden on top.
Hawaiian rolls are ideal because they stay soft and create pockets for the hot dogs. Slider buns or dinner rolls will work but may dry out more quickly.
