Preheat oven to 400°F. Arrange bacon slices on a foil-lined baking sheet and bake for about 15 minutes, or until crispy. Set aside.
While the bacon is cooking, slice the slab of Hawaiian rolls in half horizontally to separate the tops from the bottoms.
Spread a thin layer of mayonnaise on the cut sides of the rolls. Place them on a separate baking sheet and toast in the oven until lightly golden.
In a large mixing bowl, combine the diced tomato and chopped lettuce.
Chop the turkey and ham deli meat into bite-sized pieces and add them to the mixing bowl.
Add mayonnaise to the bowl and season with black pepper to taste. Toss everything together until well combined.
Remove the toasted rolls from the oven. Spread the chopped club mixture evenly over the bottom half of the rolls.
Crumble the cooked bacon over the filling, then layer the cheddar cheese slices on top.
Place the top half of the rolls back on. Slice into individual sliders and serve immediately.
Store leftover filling in an airtight container up to 3 days; reheat sliders wrapped in foil at 325°F for 8–10 minutes or assemble fresh rolls with chilled filling and add room-temperature bacon.
Assemble the filling up to 4 hours ahead and refrigerate, but toast the rolls and build the sliders just before serving to keep them from getting soggy.
Brush the cut sides lightly with mayo (as the recipe does) and toast face-down in a skillet or on a sheet pan at 375°F for 2–3 minutes until golden and warm, not hard.
Yes; shred or chop rotisserie chicken and mix it with the ham filling. You may need slightly less mayo since rotisserie chicken is more moist than deli meat.
Cook bacon until very crispy, drain on paper towels, and add it on top just before serving rather than mixing it into the filling.
Yes; the filling ratio stays the same—use 1 lb turkey, 1 lb ham, and 1/2 cup mayo per 24 sliders, adjusting bacon and cheese to match.
