In a bowl, whisk together the Olive oil, Lime juice + zest, garlic, spices, honey (if using). Stir in chopped cilantro last. Reserve a small amount (a few tablespoons) of the marinade in a separate container to spoon over the cooked chicken before serving. You can refrigerate the reserved marinade to use later on.
Pat chicken dry and season lightly with salt and pepper.
Add the chicken to a bowl or bag and coat with the remaining marinade. Marinate for a minimum of 30 minutes, and up to overnight. The ideal amount of time is between 2-8 hours.
Preheat your grill to medium-high (400°F). Oil the grates and grill the chicken 5-6 minutes per side if using thighs, and 4-5 minutes per side for breasts, to reach an internal temperature of 165°F.
Heat 1–2 tablespoons of oil in a large skillet over medium-high. Add the chicken and cook 5–6 min per side for thighs and 4–5 min per side for breasts.
Re-mix the reserved marinade you saved earlier and spoon over the cooked chicken for extra fresh flavor.
