Place the BBQ pork rinds in a food processor and pulse until they form fine crumbs.
In a large mixing bowl, combine the crushed pork rinds, eggs, diced onion, Parmesan cheese, salt, Worcestershire sauce, and 1/4 cup of ketchup.
Mix the ingredients together until well combined.
Add the ground beef to the bowl. Use your hands to gently mix everything together until just combined. Be careful not to overmix.
Form the mixture into a loaf shape and place it on an air fryer tray.
Cook in the air fryer for 1 hour.
While the meatloaf is cooking, prepare the glaze. In a small bowl, whisk together 1/2 cup ketchup, brown sugar substitute, and dry mustard until smooth.
Once the meatloaf is cooked, remove it from the air fryer. Spread the glaze evenly over the top.
Let the meatloaf rest for about 15 minutes before slicing and serving.
Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat slices in the air fryer at 350°F for 5–7 minutes until warmed through.
