Tips & Notes
Pro tips
Remove the pan from heat before adding the whisked egg to prevent scrambling; stir constantly to emulsify and create a silky sauce.
Finely mince the garlic and bloom it in rendered bacon fat before adding noodles to deepen flavor.
Shred or thinly slice the Havarti rather than using a thick slice for faster melting and even distribution.
Reserve a splash of noodle cooking water to loosen the sauce if it becomes too thick after adding cheese and egg.
Substitutions
Buldak Ramen → other spicy Korean instant ramen (Samyang, Shin Ramyun) — adjust seasoning to taste
Havarti cheese → Gruyère or Emmental — milder flavor but maintains creamy texture
Bacon → pancetta or prosciutto — similar fat and salt content
Egg → 2 tablespoons heavy cream — omit for dairy-free, sauce will be less rich
Storage & make-ahead
Best eaten immediately after assembly. Leftovers can be stored in an airtight container for 1 day and reheated gently over low heat with a splash of water, though the sauce may separate.
Common Questions
Can I use regular eggs instead of whisked?
Yes, but whisk the egg before adding to prevent scrambling. Pour it slowly into the hot noodles off heat while stirring constantly to create a creamy sauce.
What cheese works if I don't have Havarti?
Gruyère, Emmental, or mild cheddar work well. Avoid very hard cheeses like Pecorino, which can clump. Use about the same thickness slice.
How spicy is this dish?
Buldak ramen is moderately hot. The cheese and egg cream help balance the heat, but it remains noticeably spicy. Reduce noodles or broth if you prefer milder.
Can I make this ahead?
Cook the noodles and prepare bacon and garlic in advance, but assemble just before eating. The egg and cheese sauce is best fresh.
How much water should I use?
Follow the package instructions for cooking the ramen, then drain most liquid before adding cheese and egg to avoid a thin sauce.
