The Dutch enjoy Peanut Sauce on chips with some finely chopped raw onions and mayonnaise. It’s called “Patatje Oorlog” (which translates as “War Chips”, presumably because of the mess it makes when you eat it…). It’s incredibly popular in the Netherlands.
1 -2 tablespoon ketjap manis (or use normal soy sauce, but add an extra pinch or 2 of sugar)
1 tablespoon sambal oelek
1/2 cup mayonnaise
1/3 cup sweet onion, finely chopped

Instructions
1
Heat first 5 ingredients, (peanut butter - sambal), over low/medium heat. Add more or less of one or the other until you are happy with the balance of flavors and the consistency. Allow to cool to room temperature.
2
While peanut sauce is cooling, prepare French fries according to package directions.
3
Place hot French fries on a platter. Pour 1/2-3/4 cup peanut sauce on top, plop mayonnaise on top of that, and sprinkle with the raw onion. Serve immediately and enjoy!
