Preheat your oven to 400°F (200°C).
Arrange bacon in a single layer on a baking sheet.
Bake for about 15 minutes, or until crispy.
Remove the bacon from the pan and let it drain on a paper towel. Reserve the rendered bacon fat.
Add a small amount of the reserved bacon fat to a skillet over medium heat.
Pour in the whisked eggs and cook, stirring gently, until soft scrambled. Do not overcook. Set aside.
Lay one sheet of puff pastry on the baking sheet.
Divide the cooked bacon into four equal portions and arrange them in four quadrants on the pastry sheet.
Sprinkle the shredded cheese over the bacon.
Top the cheese with the soft scrambled eggs.
Season with freshly ground black pepper and a drizzle of hot sauce, if using.
Place the second sheet of puff pastry on top.
Cut the pastry into four equal squares. Press down the edges of each square to seal them.
Brush the tops of the pastries with more of the reserved bacon fat.
Sprinkle generously with everything bagel seasoning.
Bake at 400°F (200°C) for 15-20 minutes, or until golden brown and puffed.
