Slice the sweet onions.
Add the sliced onions, butter, brown sugar, salt, and pepper to a slow cooker.
Cover and cook on high for about 4 hours, stirring every 30-60 minutes, until the onions are deeply caramelized.
Stir in the flour until it's fully incorporated with the caramelized onions.
Pour in the beef broth and stir to combine.
Cover and let the soup come to a simmer.
While the soup simmers, lightly toast the bread slices and cut them into small squares.
Arrange the toasted bread squares over the top of the soup in the slow cooker.
Sprinkle the shredded Gruyère cheese evenly over the bread.
Cover the slow cooker again and let the cheese melt for 5-10 minutes.
Garnish with chopped green onions, serve, and enjoy.
