Combine olive oil and chopped scallions in a Suvie pan. Insert pan into your Suvie and broil for 10 minutes, stirring halfway through.
Remove pan and stir in artichokes, peas, fava beans, ½ cup water, and 1 tsp salt. Return pan to your Suvie. Input settings, and cook now or schedule. Bottom Zone: Slow Cook Low for 1 hour
Remove pan from your Suvie and stir in white wine vinegar and sugar. Season to taste with salt and pepper. Divide between plates, garnish with mint, and serve with crusty bread.
