Pat the sirloin steak dry with a paper towel and cut it into 1-inch cubes.
Season the steak cubes generously with salt, black pepper, and garlic powder. Toss to ensure all pieces are evenly coated.
Heat olive oil in a large skillet over high heat until it shimmers.
Carefully place the steak bites in the hot skillet in a single layer, ensuring not to overcrowd the pan. Sear for about 1 minute per side until a brown crust forms.
Once seared, remove the steak bites from the skillet and set them aside on a plate.
Reduce the heat to medium-low. Add the butter to the same skillet. Once it has melted, add the minced garlic and cook for about 30 seconds until fragrant.
Stir in the Worcestershire sauce (if using) and the chopped fresh parsley.
Return the seared steak bites to the skillet. Turn the heat to very low and toss everything together for a few seconds to coat the steak in the garlic butter sauce.
Remove from heat, plate the steak bites, and pour any remaining sauce from the pan over the top. Serve immediately.
Store cooked steak bites and sauce in an airtight container for up to 3 days; reheat gently in a skillet over low heat with a splash of water to restore sauce consistency.
Sirloin is ideal because it's tender, affordable, and cooks quickly when cut into 1-inch cubes. New York strip or ribeye also work well for richer flavor.
Sear 2–3 minutes per side for medium-rare. Use a meat thermometer: 130°F for medium-rare, 140°F for medium. Don't overcook or the cubes will toughen.
Cook the steak bites fresh for best texture, but you can prep and cube the steak up to 24 hours ahead. Reheat gently in the garlic butter sauce over low heat.
Pair with mashed potatoes, rice, crusty bread, or a simple green salad to soak up the garlic butter sauce.
Yes, scale all ingredients proportionally. Sear steak in batches to avoid crowding the pan, which prevents proper browning.
