Make the dough: In a bowl, mix together flour, sugar, baking powder, and salt.

Cut in the cold butter until the mixture resembles coarse crumbs.

Add the egg and mix until a dough forms. Add cold water if needed. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.

Make the almond filling: Mix together ground almonds, sugar, egg, and almond extract until well combined.

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Divide the chilled dough in half. On a floured surface, roll out one half and cut into circles (about 3-4 inches in diameter).

Place a spoonful of almond filling in the center of each circle.

Roll out the second half of the dough and cut matching circles. Place on top of the filling and press the edges to seal.

Brush the tops with beaten egg wash and press a blanched almond on top if desired.

Bake for 20-25 minutes, or until golden brown.

Allow to cool on a wire rack before serving.
