Form the ground beef into 5 patties. Wrap in plastic and refrigerate until ready to cook.
Preheat a griddle and drizzle with olive oil.
Place bacon on the griddle and cook until crispy, flipping occasionally.
Remove the cooked bacon and place it on a paper towel-lined plate to drain excess grease.
Using the rendered bacon grease, heat the griddle to medium-high.
Place the burger patties on the hot griddle.
Cook for about 6 minutes on the first side, then flip.
Season the cooked side of the burgers with salt and pepper.
After a few more minutes, flip the burgers again and season the other side with salt and pepper.
Place a slice of Swiss cheese on each patty and allow it to melt.
Once the cheese is melted, remove the patties from the griddle.
On a cooler part of the griddle, melt the butter.
Place the hamburger buns face down on the melted butter and toast on low heat until golden brown.
To assemble, spread mayonnaise on the top and bottom buns. Add ketchup and mustard to your liking.
Layer on pickles, shredded lettuce, a slice of tomato, and sliced red onion.
Place the cheeseburger patty on the bottom bun and top with 3 slices of crispy bacon.
Add the top bun and serve immediately.
Cooked burgers keep refrigerated up to 3 days in an airtight container; reheat gently on the griddle or skillet over medium heat. Raw patties freeze up to 3 months; thaw in the refrigerator before cooking.
griddle or flat-top skillet · instant-read thermometer · burger press (optional, for uniform thickness)
Make a shallow indent in the center of each patty with your thumb before cooking—this prevents the edges from contracting and keeps the burger flat and evenly cooked.
After flipping the patties, immediately top with cheese and cover with a lid or foil tent for 1–2 minutes to trap steam and melt the cheese evenly.
Yes. Cook bacon on one side of the griddle to render fat, then move to a cooler zone. Use the hotter side for burgers so bacon grease seasons the meat without burning the burgers.
Medium (160°F internal temp) is safest and juiciest for ground beef. Use an instant-read thermometer inserted sideways into the thickest part without touching the griddle.
Yes. Butter the cut sides lightly and griddle them face-down for 1–2 minutes until golden—this prevents sogginess and adds flavor.
