Peel, core, and chop the apples and add them to a large pot or saucepan.
Pour the water and apple cider vinegar into the pot. Cook over low heat, stirring often to prevent burning, until the apples start to soften, about 4 minutes.
Cover the pot and simmer over low heat, stirring occasionally, for 10 minutes.
Uncover the pot and stir in the cinnamon and salt. Replace the lid and simmer for another 10 to 20 minutes, or until the apples are very tender and juicy.
Remove the pot from the heat. Use a potato masher to mash the apples to your desired consistency. For a smooth puree, pulse in a food processor or blend with an immersion blender.
Taste and adjust seasoning. If using tart apples, add honey or maple syrup to sweeten if desired.
