Mix all marinade ingredients in a bowl until well combined
Cut pork into 2-inch thick strips along the grain
Place pork in marinade and coat thoroughly
Marinate for at least 4 hours or overnight in refrigerator
Preheat oven to 375°F (190°C)
Line a baking sheet with foil and place a wire rack on top
Remove pork from marinade and place on wire rack
Roast for 25-30 minutes
Brush with reserved marinade and flip pieces
Continue roasting for another 20-25 minutes until caramelized
Let rest for 5 minutes before slicing against the grain
