Wash and cut the potatoes into thin french fries.
Place the cut potatoes in a large bowl of cold water and add ice cubes. Let them soak to remove excess starch.
Cut the chicken breasts into 1-inch chunks.
Place the chicken chunks in a food processor, add seasonings of your choice, and pulse until the chicken is finely ground.
Form the ground chicken mixture into small, nugget-sized patties and arrange them on a parchment-lined baking sheet.
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, onion powder, garlic powder, and paprika.
Gradually whisk in the water to the dry ingredients until you have a smooth, pancake-like batter.
In a large, deep pot or skillet, heat about 2-3 inches of vegetable oil over medium-high heat.
Drain the potatoes and pat them completely dry. Carefully add them to the hot oil and fry for 3-4 minutes until lightly cooked but not browned. Remove from oil and drain.
Increase the oil heat slightly. Return the fries to the hot oil and fry for another 3-4 minutes until golden brown and crispy. Remove and drain on a wire rack.
Dip each chicken nugget into the batter, ensuring it's fully coated.
Carefully place the battered nuggets into the hot oil, being careful not to overcrowd the pan. Fry for about 8 minutes, flipping halfway, until golden brown and cooked through.
Remove the cooked nuggets from the oil and let them drain on a wire rack.
Serve the homemade chicken nuggets and french fries immediately with ketchup and mayonnaise for dipping.
