Each one of these appetizer recipes involves assembling bread with various fillings to create small canapés that are easy to pick up and eat with your hands.

For the sobrasada canapés, spread a slice of bread with some of the sobrasada and top it with a slice of cheese. Spread another piece of bread with some of the cheese spread.

For the ham and cheese rolls, arrange four slices of bread on a clean surface so that their edges are touching. Use a rolling pin to flatten them into one layer. Arrange 6 of the ham slices on a sheet of plastic wrap in an even layer.

For the salmon and cheese rolls, stir the onions with the pickles and mayonnaise until combined. Arrange the smoked salmon in a flat layer on top of a sheet of plastic wrap.
