Season chicken thighs on both sides with salt, garlic powder, onion powder, paprika, chili powder, and a light dusting of cayenne pepper.
Place the seasoned chicken in an air fryer and cook at 375°F for 12 minutes.
While the chicken is cooking, prepare the coleslaw. In a small bowl, combine the coleslaw mix, yogurt ranch dressing, and hot honey.
Mix the coleslaw ingredients until well combined.
In a separate small bowl, prepare the sauce by combining the hot sauce, light mayonnaise, and water.
Whisk the sauce until it is completely smooth.
Once the chicken is cooked, assemble the sandwiches. Place one chicken thigh on the bottom half of each toasted English muffin.
Top the chicken with pickle slices, if using.
Add a generous portion of the coleslaw on top of the pickles.
Drizzle the spicy sauce over the coleslaw and on the top half of the English muffin. Place the top bun on the sandwich and serve.
