De-hoof the cow foot if not already done, cut the meat into bite-size chunks, and wash thoroughly.
Place the cow foot pieces into a pot, pour in just enough water to cook the meat. Add chopped onions, stock cubes, and any meat spice of choice. Leave to cook until done.
While the meat is cooking, pound the potash into powder and dissolve it in a little water. Stir continuously, strain through a sieve, and set the potash liquid aside. Alternatively, mix the powdered potash with a little of the meat stock.

Add the cooked cow foot into the palm oil mixture and mix thoroughly until all the meat is well coated in the oil.
Place the pot on heat and simmer, stirring continuously to prevent burning. Remove from heat when the meat is well heated and the palm oil gravy is bubbling.
Transfer the meat into a plate or a small traditional wooden mortar (or brown ceramic bowls for a traditional effect).
Garnish with sliced onion rings and thinly sliced utazi leaves. Serve immediately.
