Get boneless mutton cut into small pieces. Mince it once at home, just once.
Take a mortar and pestle and pound the mince, adding fat from time to time in small quantities. Keep turning the mince regularly as you pound, dipping your hands in water occasionally. Pound until well processed — understand the difference between minced meat and pounded meat.
Add black cardamom seeds (moti elaichi seeds), 1/2 tablespoon salt, 1/2 ladle mustard oil, and egg white to the pounded meat and mix evenly.
Place the fennel powder, cumin powder, cinnamon powder, green and black cardamom powder, cloves, coriander powder, and kasoori methi into the white malmal cloth and tie it well to form a spice pouch.
Put one litre of water in a deep pan (patila) and add bay leaves. Place the tied spice cloth in the water and bring to a boil on full heat.
Meanwhile, shape the pounded mutton into balls of about 30–40g each. Add the meatballs to the boiling water. Reduce to medium heat and cook until half the liquid has evaporated.
Remove the spice pouch and place it in a small bowl with about a cup of water. Squeeze it well to release the flavors. Add this squeezed liquid to the pan. Boil for one minute, then discard the spice pouch.
Set the deep pan aside from the heat.
In a frying pan on full flame, add a little oil and fry the finely chopped onions until browned. Once browned, grind the onions to a paste.
Add zeera (cumin seeds) to the frying pan along with the whipped curd and ground onions. Stir continuously until it starts boiling, being careful not to let the curd curdle — continuous stirring prevents this.
Add this yogurt-onion mixture to the deep pan along with the ghee. Cook on low heat for 10 minutes.
Garnish with coriander or mint leaves. Serve hot with steamed rice.
