Wash the beef tongue and cut into chunks. Put in a pot with the garlic, bay leaf, onion, salt, and 2 liters water and let boil until soft, about 3 hours. Let cool down, then peel the hard sides and discard. Cut into small dice. Serve in a taco. Add onion and cilantro to garnish.
