In a skillet over medium heat, sauté the diced bell pepper and onion.
Season the vegetables generously with salt to help draw out moisture and cook until softened. Set aside.
In a blender, combine the egg whites, whole eggs, cottage cheese, hot sauce, and seasoning salt.
Blend the egg mixture until completely smooth.
Preheat your oven to 375°F (190°C). Prepare a 12-cup muffin tin by sprinkling a layer of shredded cheese in the bottom of each cup.
Chop the cooked sausage links into small, bite-sized pieces.
Distribute the chopped sausage evenly among the muffin cups, on top of the cheese.
Add a spoonful of the sautéed vegetable mixture to each cup.
Pour the blended egg mixture into each cup, filling them about three-quarters of the way full.
Top each cup with the remaining shredded cheese.
Bake for 20-25 minutes, or until the egg bites are set and golden brown on top.
Let cool for a few minutes in the tin before removing. Serve immediately or store in an airtight container in the refrigerator.
