Place oolong tea leaves into a teapot.
When the water temperature reaches 195°F, dispense 8 fl. oz. hot water into the teapot and steep for 5 minutes.
Cut lemongrass in half, thinly slice one section. To make the optional daisy-like garnish, cut the other segment in half and slit ends to create a daisy-like decoration.
Place coconut milk and sliced lemongrass in a pitcher and heat in the microwave for 30 seconds. Stir the coconut milk and heat for another 30 seconds.
Pour steeped tea into two cups. Pour warmed coconut milk through a strainer into each cup. Add honey to taste.
Place lemongrass garnish on top.
Enjoy!
Brew the tea and store in an airtight container in the refrigerator for up to 2 days; reheat coconut milk mixture gently before serving.

Heat water to 195°F. This temperature preserves the delicate flavor of oolong without over-extracting bitterness.
Steep for 5 minutes after pouring 195°F water over the leaves. Longer steeping will intensify the flavor.
Brew the oolong tea ahead and refrigerate. Heat the coconut milk mixture just before serving for best flavor and texture.
Canned full-fat coconut milk creates the richest, smoothest drink. Light coconut milk will work but produce a thinner body.
Cut one stalk segment in half lengthwise and slit the ends to create a daisy-like decoration. Use fresh, tender lemongrass for the best appearance.
