On a piece of parchment paper, form a circle with the shredded mozzarella cheese.
Arrange the pepperoni slices on top of the cheese.
Place the parchment paper with the cheese and pepperoni into an air fryer basket. Cook at 400°F for about 10 minutes, or until the cheese is melted and crispy at the edges.
While the pizza crust cooks, prepare the salad. In a large bowl, combine the chopped romaine lettuce with Caesar dressing and toss to coat.
Sprinkle the grated Parmesan cheese over the salad and toss again.
Once cooked, remove the pizza crust from the air fryer. Flip it over so the pepperoni side is down.
Spoon the Caesar salad onto the center of the cheese crust.
Fold the crust in half like a taco to create the wrap.
Sprinkle with red pepper flakes, if desired, and serve immediately.
Store leftover crust in an airtight container at room temperature up to 2 days; reheat briefly in the air fryer at 350°F to restore crispness. Assemble with fresh salad and dressing before serving.
