Place frozen steak slices on a hot electric griddle and season generously with salt and pepper.
Cook for about a minute, then flip. Continue cooking and use a spatula to break the steak into smaller pieces.
While the steak cooks, slice the Hawaiian rolls in half horizontally and place the bottom half on a foil-lined baking sheet. Layer with 6 slices of white American cheese.
Once the steak is fully cooked, transfer it from the griddle and spread it evenly over the cheese-covered rolls.
On the same griddle, add the sliced white onion, green bell pepper, and red bell pepper. Sauté until softened and slightly caramelized.
Layer the sautéed onions and peppers over the steak.
Top the vegetables with the remaining 6 slices of white American cheese.
Spread mayonnaise evenly on the cut side of the top half of the rolls.
Place the top half of the rolls onto the sliders to close them.
Brush the tops of the rolls with melted butter.
Bake in a preheated 350°F (175°C) oven for about 15 minutes, or until the cheese is fully melted and the tops are golden brown.
Remove from the oven, transfer the entire slab of sliders to a serving platter, and slice into individual portions before serving.
Assemble sliders up to 2 hours ahead, wrap in foil, and refrigerate. Reheat wrapped at 350°F for 10 minutes until cheese melts and rolls warm through.
Yes. Freeze fresh steak for 1-2 hours until firm, then slice thinly against the grain. Frozen steak is easier to slice uniformly thin.
Keep it frozen or partially frozen while slicing. A sharp knife or deli slicer works best. Aim for 1/8-inch thickness.
Assemble up to 2 hours before serving and wrap in foil. Reheat at 350°F for 10 minutes. Don't assemble more than 2 hours ahead as rolls may become soggy.
Provolone, Swiss, or Cheez Whiz are authentic Philly options. White cheddar also melts well on sliders.
One 12-count package of Hawaiian rolls yields 12 sliders, one per roll.
