In a large bowl, combine the all-purpose flour, salt, baking soda, and baking powder. Whisk to mix.
Add the plain yogurt, vegetable oil, and water to the dry ingredients.
Mix with a spatula and then your hands until a shaggy dough forms.
Turn the dough out onto a floured surface and knead briefly until it comes together.
Cut the dough into 8 equal pieces.
Preheat a dry skillet or pan over very high heat.
On a well-floured surface, use a rolling pin to roll each piece of dough into a thin oval or round shape.
Place the rolled dough onto the hot pan and cook for just a few seconds on each side, until it bubbles up and develops charred spots. Flip and cook the other side.
Repeat with the remaining dough pieces.
If desired, combine melted butter, minced garlic, and chopped cilantro. Brush the mixture over the warm naan before serving.
Store cooled naan in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months. Reheat on a hot skillet for 30 seconds per side or in a toaster.

Yes. This recipe uses baking soda and baking powder instead of yeast for instant lift, with yogurt adding tang and moisture.
Use a hot skillet over medium-high heat. It should be hot enough that the dough bubbles and browns within 1–2 minutes per side.
Yes, make the dough up to 2 hours ahead and refrigerate. Let it sit at room temperature for 10 minutes before cooking.
Greek yogurt works (use slightly less due to thickness), or replace with sour cream or buttermilk in a 1:1 ratio.
Naan is done when the bottom is light golden-brown with charred spots and the top is puffy with bubbles.
