Pour half of the cold root beer into a small saucepan.
Place the saucepan on the stove and bring the root beer to a boil.
While the root beer is heating, pour the remaining half of the cold root beer into a separate mixing bowl.
Sprinkle the packet of gelatin over the cold root beer in the bowl.
Whisk the gelatin and cold root beer together and let it sit for about one minute to bloom.
Once the root beer on the stove is boiling, carefully pour it into the bowl with the gelatin mixture.
Whisk everything together for a few minutes until the gelatin is completely dissolved.
Pour the jello mixture into serving glasses or dishes, filling them about three-quarters full.
Place the glasses in the refrigerator to set for at least 3 hours.
Once the jello is firm, top with whipped topping and serve.
Cover and refrigerate up to 2 days. Add whipped topping immediately before serving to avoid sogginess.

Typically 3–4 hours in the refrigerator, or overnight for best results. Avoid moving it during this time to prevent separation.
Yes. Prepare the jello up to 2 days in advance and store covered in the refrigerator. Add whipped topping just before serving to prevent sogginess.
Ensure the root beer was cold when mixed and the gelatin was fully dissolved in hot water first. Check that your refrigerator is at 40°F or below.
