Preheat your oven to 400°F. Line a baking sheet with parchment paper.
Arrange the saltine crackers in a single, tight layer on the prepared baking sheet.
In a medium saucepan, combine the salted butter and brown sugar.
Melt the butter and sugar over medium heat, then bring to a boil. Let it boil for exactly 3 minutes, stirring occasionally.
Remove the pan from the heat and carefully stir in the vanilla extract. The mixture will bubble up.
Immediately pour the hot toffee mixture over the crackers and spread it into an even layer with a spatula.
Bake for 5-7 minutes, until the toffee is bubbly all over.
Remove the pan from the oven and immediately sprinkle the chocolate chips evenly over the hot toffee.
Let the pan sit for 5 minutes to allow the chocolate chips to melt.
Use an offset spatula to spread the melted chocolate into a smooth, even layer.
While the chocolate is still wet, add your desired toppings, such as crushed peppermint, flaky sea salt, sprinkles, or toffee bits.
Allow the toffee to cool completely until the chocolate is firm. You can place it in the refrigerator to speed up the process.
Once set, break the toffee into pieces and serve.
Store in an airtight container at room temperature for up to 3 days; do not refrigerate as moisture will soften the toffee.
