Preheat your oven to 425°F (220°C).
In a large bowl, combine the ground beef, about 1 cup of the shredded cheddar cheese, diced jalapeños (if using), taco seasoning, and dried minced onion. Mix with your hands until just combined.
Wrap the flour tortillas in a damp paper towel and microwave for 30-60 seconds to make them pliable.
Line a large sheet pan with aluminum foil and spray it generously with cooking spray.
Working with one tortilla at a time, press the beef mixture in a thin, even layer over one half of the tortilla, extending to the edge.
If using, spread a layer of refried beans on the other half of the tortilla. Sprinkle a little more cheese over the fillings.
Fold the tortilla in half and press down gently. Spray the top of the folded taco with cooking spray.
Place the tacos on the prepared baking sheet, sprayed-side down. Spray the new top side with more cooking spray.
Bake for 10-12 minutes, until the bottom is golden and crispy.
Carefully remove the pan from the oven and flip the tacos. The cheese will have created a crispy 'skirt'.
Return to the oven and bake for another 5-7 minutes, or until the second side is also golden brown and crispy.
Garnish with fresh cilantro and serve immediately with your favorite toppings like guacamole, pico de gallo, and sour cream.
Store cooled tacos in an airtight container up to 3 days; reheat on a sheet pan at 350°F for 5–8 minutes until warmed through.

Yes. Assemble the tacos on the sheet pan, cover with foil, and refrigerate up to 8 hours before baking. Add 2–3 minutes to baking time if baking from cold.
Ground turkey, ground chicken, or seasoned black beans work well. Keep quantities the same and adjust cooking time if needed.
Ensure the sheet pan is preheated, tacos are arranged in a single layer without overlap, and the oven reaches 400°F before baking.
Corn tortillas are more delicate and may tear. Warm them first to increase pliability, or stick with flour tortillas for best results.
Double the filling and tortillas for 16 tacos; keep oven temperature the same but check for doneness around 15 minutes.
