Dice the Spam into small, even cubes.
Add the diced Spam to a non-stick skillet over medium-high heat. Cook, stirring occasionally, until the Spam is browned and slightly crispy, about 5-7 minutes.
In a small bowl, whisk together the sugar, soy sauce, and oyster sauce.
Pour the sauce mixture over the cooked Spam in the skillet. Stir to coat everything evenly and cook for another minute until the glaze thickens slightly.
In a square baking dish, add the cooked rice and drizzle with rice vinegar.
Use a rice paddle to gently mix the vinegar into the rice, then press the rice down into an even layer.
Sprinkle the furikake seasoning evenly over the layer of rice.
Spoon the glazed Spam over the furikake and spread it into an even layer.
Drizzle with sriracha and Japanese mayonnaise. Garnish with chopped green onions and black sesame seeds.
To serve, scoop a portion of the bake onto a sheet of roasted seaweed. Top with optional cucumber or avocado slices if desired.
Store covered in the refrigerator up to 3 days. Reheat gently in a 325°F oven for 10–15 minutes to avoid drying out the rice.
Yes. Assemble the casserole up to 8 hours ahead, cover, and refrigerate. Bake just before serving for best texture.
Short-grain sushi rice works best because it's stickier and holds layers together better than long-grain varieties.
Canned corned beef or luncheon meat works as a substitute, though it will change the flavor profile slightly.
Check your soy sauce, oyster sauce, and furikake labels; many contain gluten. Use tamari and certified gluten-free alternatives if needed.
Scoop portions directly onto roasted nori sheets using a spoon, similar to traditional spam musubi.
