Heat ghee in a large skillet over medium-high heat. Add the diced onion and sauté until softened and lightly browned.
Push the onions to one side of the skillet. Add the cubed steak to the other side in a single layer and sear until a nice crust forms.
While the steak cooks, crack the eggs into a separate bowl, add a pinch of salt, and whisk until well combined.
Once the steak is tender, add the diced tomato to the skillet. Season with another pinch of salt and stir everything together.
Pour the whisked eggs evenly over the steak and vegetable mixture in the skillet.
Reduce the heat to low, cover the skillet with a lid, and let the eggs cook for a couple of minutes until they just begin to set.
Remove the lid and gently scramble the eggs with the steak and vegetables until cooked to your liking.
Sprinkle the shredded mozzarella cheese over the top and allow it to melt.
Garnish with fresh chopped parsley or cilantro.
Serve immediately, scooping up the scramble with pieces of warm pita bread.
Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet over low heat, stirring occasionally; do not reheat in the microwave, as it dries the eggs.
