Place peeled potatoes in a large skillet or pot.
Cover the potatoes with water and bring to a boil. Cook until fork-tender.
Drain the water from the potatoes.
Return the potatoes to the warm pan and mash them with a fork.
Add butter, sour cream, garlic powder, black pepper, and dried parsley flakes to the mashed potatoes.
Add the Southern-style seasoning blend.
Add the shredded parmesan and smoked mozzarella cheese.
Pour in the milk and mix everything together until well combined.
Transfer the potato mixture into a large zip-top bag.
Press the mixture flat in the bag to form an even, rectangular layer.
Place the bag flat in the freezer for a minimum of 2 hours, or until completely frozen solid.
Once frozen, remove the potato slab from the bag and cut it into fry-shaped strips.
Heat frying oil in a deep pan or pot to 350°F (175°C).
Carefully place the frozen potato fries into the hot oil and fry until golden brown and crispy on all sides.
Remove from the oil, drain on a paper towel, and serve immediately.
Store cooled fries in an airtight container in the refrigerator for up to 2 days, or freeze the uncooked mixture for up to 3 months. Reheat fried fries in a 350°F oven for 5–7 minutes to restore crispness.
