In a mixing bowl, toss the cubed potatoes with olive oil and a small amount of the taco seasoning packet.
Air fry the seasoned potatoes at 400°F for 12 minutes, shaking the basket halfway through.
While the potatoes are cooking, add the ground beef and diced yellow onion to a large skillet over medium-high heat. Brown the beef, breaking it apart as it cooks.
Once the beef is fully browned, stir in the minced garlic and cook for one more minute until fragrant.
Add the rest of the taco seasoning packet and the water to the skillet. Stir to combine and let it simmer for a minute.
Stir in the can of diced tomatoes with green chiles and the can of black beans.
Once the potatoes are done air frying, add them to the skillet and mix everything together.
Top the skillet mixture evenly with the shredded cheddar cheese.
Cover the skillet, reduce the heat to low, and let it cook just until the cheese is fully melted.
Serve immediately.
Store covered in the refrigerator up to 3 days. Reheat in a skillet over medium heat with a splash of water; microwave is faster but may dry out the edges.
Yes. Red or Yukon gold potatoes work well and have similar cook times. Avoid starchy russets, which break down more easily when diced small.
Pierce a cube with a fork—it should be tender with minimal resistance. This typically takes 12–15 minutes after adding the beef mixture.
Cook fully, cool, and refrigerate up to 3 days. Reheat in a skillet over medium heat, adding a splash of water if it dries out.
Monterey Jack, Mexican blend, or pepper jack work well. Use the same amount and melt over the cooked skillet just before serving.
