In a small bowl, whisk together the almond milk, nutritional yeast, garlic, Dijon mustard, turmeric, cumin, and ¼ teaspoon salt.
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the crumbled tofu to the pan and cook, stirring occasionally, until warmed through, 3 to 5 minutes.
Reduce the heat to low and stir in the almond milk mixture. Cook for 3 minutes more, stirring occasionally.
Remove from heat and season to taste with salt and pepper before serving.
