Mix the cream cheese in a mixer until softened and smooth.
Gradually add the sweetened condensed milk, scraping the bowl frequently to avoid lumps. Mix thoroughly until no lumps remain.
Mix in the evaporated milk gradually. If lumps form, use a whisk to smooth them out. Set aside.
Line a 9x13 pan with cookies/wafers in two layers, making sure the second layer overlaps the first.
Add the 1/3 cup fresh lime juice to the milk mixture and mix well. The mixture will begin to thicken. If it hasn't thickened, add more lime juice one tablespoon at a time.
Pour the mixture over the layered cookies immediately and spread evenly.
Store in the refrigerator for at least 1 hour until the milk mixture is firm.
Cut into square pieces and serve with fresh fruit. Do not make more than a couple hours before serving or the cookies will become soggy.
Refrigerate in an airtight container for up to 1 day; do not freeze. Do not store assembled dessert for more than a few hours as cookies will become soggy.

Yes, but do not assemble more than a couple of hours before serving, or the cookies will become soggy. Prepare the milk mixture in advance and chill it, then assemble and chill for 1 hour before serving.
Marias Cookies, Nilla Wafers, gluten-free pecan sandies, or vanilla cookies all work. Use about 2 packages of standard cookies to line a 9x13 pan in two overlapping layers.
Whisk the mixture thoroughly as you add the evaporated milk. After adding lime juice, if lumps persist, continue whisking. The lime juice will also help thicken and smooth the texture.
Start with 1/3 cup fresh lime juice. Add it to the milk mixture and stir; it will begin to thicken. If it hasn't thickened enough, add more lime juice one tablespoon at a time until you reach the desired consistency.
Use evaporated milk, which is unsweetened. The recipe already includes sweetened condensed milk for sweetness, so avoid sweetened evaporated milk to prevent over-sweetening.
