Combine ingredients in blender with crushed ice and blend until smooth.
Pour into parfait glass.
Garnish with half a spiced apple ring.
This is a fresh-serve drink; mix only when ready to drink. The ice cream will melt within 5–10 minutes.
You can, but the ice cream is essential to the drink's character—it mellows the spirits and creates the signature creamy texture. Try a smaller scoop if you prefer less sweetness.
Any standard brandy or cognac will work. Use a middle-shelf option since the ice cream and crème de cacao dominate the flavor profile.
Brown crème de cacao adds chocolate notes that pair with vanilla ice cream. Clear crème de cacao will work but won't deliver the same depth.
Serve immediately in a lowball or rocks glass with the ice cream scoop floating on top. Drink through a straw or spoon the ice cream as it melts.
Mix the brandy and crème de cacao ahead, but add ice cream and serve immediately—it melts quickly.
