Store cooked patties and fries separately in airtight containers for up to 3 days; reheat fries in a 375°F oven for 5 minutes to restore crispness. Assemble fresh for best texture.
Cut fries to uniform thickness, soak in cold water for 30 minutes, pat dry thoroughly, and fry at 325°F for the first cook, then 375°F for the second cook until golden. Add cheese immediately after the final fry while they're still hot.
Cook bacon in a skillet over medium heat until crispy and the fat renders, or bake at 400°F for 15-20 minutes for even crispness. Drain on paper towels before layering on the burger.
Slice onions thinly, cook in butter over medium-low heat for 30-40 minutes, stirring occasionally, until golden brown and sweet. Add salt to help release moisture.
