In a large skillet over medium-high heat, add the ground beef and chopped onion. Cook, breaking up the meat, until it is browned.
Drain any excess grease from the skillet.
Stir in the minced garlic and cook for about 30 seconds until fragrant.
Add the tomato sauce, uncooked rice, water, chicken bouillon powder, garlic powder, Italian seasoning, paprika, salt, and pepper to the skillet.
Stir everything together until well combined and bring the mixture to a simmer.
Cover the skillet, reduce the heat to low, and cook for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
Turn off the heat and sprinkle the shredded cheddar cheese evenly over the top.
Cover the skillet again and let it sit for 2-3 minutes, allowing the residual heat to melt the cheese.
Serve hot, optionally with a side of green beans.
Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stovetop with a splash of water to restore moisture.
Brown rice requires longer cooking time (40-45 minutes vs. 20 minutes). Increase water to 1.5 cups and monitor for doneness.
Use medium heat, stir occasionally during the first 5 minutes, and ensure all rice is submerged in liquid before covering.
Prepare through the simmering step, refrigerate up to 2 days, then reheat gently on stovetop and add cheese before serving.
Substitute 1 cup beef or chicken broth for 1 cup of the water and omit bouillon powder for equal flavor.
Freeze without cheese up to 3 months. Thaw overnight in refrigerator, reheat on stovetop, and add fresh cheese before serving.
