In a medium bowl, combine the ground chicken, Parmesan cheese, salt, pepper, garlic powder, Italian seasoning, and optional crushed red pepper flakes. Mix until just combined.
Spread a thin, even layer of the chicken mixture over one side of each slice of frozen Texas toast, covering the surface completely to the edges.
