In a blender, combine chipotle peppers in adobo, honey, garlic cloves, cilantro, avocado oil, lime juice, and Maggi seasoning.
Add all the spices: ground cumin, coarse salt, chipotle powder, ground coriander, chili powder, ground cinnamon, and ground cloves.
Blend all marinade ingredients until smooth.
Place the thinly sliced flank steak in a large resealable bag and pour the marinade over it.
Massage the bag to ensure all the steak is evenly coated with the marinade.
Seal the bag and let it marinate in the refrigerator for at least 4 hours.
Heat a large skillet or comal over medium heat and add a little oil.
Cook the marinated steak in batches, being careful not to overcrowd the pan.
Cook for 2-3 minutes per batch until the meat is fully cooked and has a nice char.
Remove the cooked steak from the skillet and repeat the process with the remaining meat.
Serve the carne asada hot, for example in tacos with guacamole.
