For Elote Corn: Pour 1/2 cup water in to the Suvie rice pot (black handles). Place strainer insert into the pot and place corn in the strainer insert. Cover pot with lid, ensuring pot is centered on the hot plate. Steam, 10 minutes.
Meanwhile, combine chili powder, cotija and cilantro on a plate, cover and refrigerate until ready to use.
When cook is completed, slather each ear with mayonnaise, and roll in prepared cotija cheese mixture.
For Succotash: Combine all ingredients in a Suvie pan. Slow Cook on High in Suvie for 1½ hours. Remove from Suvie and serve.
For Corn Fritters: Grease a Suvie pan. Whisk together all ingredients except for the sour cream. Pour into prepared pan and Slow Cook on High in Suvie for 1 hour.
After the cook, remove pan from Suvie. Cut fritter into rectangles and serve with a dollop of sour cream.
Store leftover succotash and fritters in airtight containers in the refrigerator for up to 3 days; reheat fritters in a 350°F oven and warm succotash gently on the stovetop.
Elote is best served immediately after cooking. Succotash can be made a few hours ahead and reheated gently. Corn fritters are best served fresh but can be refrigerated and reheated in a 350°F oven for 5 minutes.
Feta cheese, queso fresco, or crumbled goat cheese work well as replacements for cotija in elote.
Yes. Fresh lima beans may need 5–10 minutes longer cooking time depending on size. Fresh okra should be cut into bite-sized pieces and added near the end to avoid mushiness.
Fritters should be deep golden brown on both sides and crispy. A skewer inserted in the center should come out without wet batter.
